if your grill has 2 burners just turn one of them off and adjust the flame on the other to keep you temp where you need it which is around 250 to 300 degrees

How about on a gas grill? My grill cooks fast and hot. I noticed you have the heat at one side. Should i do that with my grill? I’am just trying to work with my “Q” and just looking for pointers. I have 30# of ribs in my freezer i want to try cooking.
