yes, this idea is taught at the Tree of Life… the almonds do not actually reach that temp… yummie recipe, go Zack! =)~

Matt asked, “Does dehydrating 145 Almonds at the same time make them cooked?” I would have to say no – it doesn’t seem to matter how many you dehydrate at the same time.

Fungus vs. raw.Personally, would rather be safe at 145 degrees.

They are still raw. The air temperatur inside the dehydrator is 145 but the almonds are not at that temperature.

I muscle tested on this question, ” Does my body recognize these nuts as raw with enzymes in tact?” No “Will my white blood cells respond as if invaded by a foreign substance?” Yes. So that is what my body says about it. Test for yourself.

I guess it’s still raw if Gabriel Cousens says so…but like indigocenter asked, why not 115 overnight?? Wouldn’t it be simpler?

i agree, 145 for first hour is a-ok! I can’t see it actually cooking the insides for that short of time.

I was surprised by the 145 degrees at first as well when I saw it in my Cafe Gratitude cook book. Then I started hearing it more and more. I guess it’s okay when you’re dealing with cold wet almonds.

I say still raw because they’re going in wet and I don’t think the dehydrater (I have an excalibar) really gets that hot.I have a sweet almond idea Matt. Sprouted almonds coved in your favorite liquid sweetener with sprinkled sesame seeds. Tell me what you think.

i would think that, while obviously far healthier than cooked almonds, dehydrating them at that temperature for an hour or two would probably destroy a lot of the enzymes. i trust gabriel cousens, but i don’t know if i would eat this recipe

Still raw. The temp. of the food never actually gets to 145 degrees due to evaporation and the fact that with dehydration it is just circulating air. I believe excalibur has a reference to it on their site about the process. In anycase, even if it did get to 145 degrees it would take WAY longer than 1 hour in the D.

nuts just arn’t that healthy raw or not, but heating them to 145 is not very significant at all…

I say still raw…or at least still good for you. 145 in the dehydrator and 145 in the oven is not the same…NO? beats 300+ under a broiler like the store nuts.

cafe gratitude also does 145 degrees for an hour and then lowers it down to 105 for all their dehydrated foods. it doesn’t cook and prevents molding, fungus, etc. i’m pretty sure it’s still raw

I think 145 is okay for the first 1st hour, but I won’t do it! 105 all the way, the enzymes are to valuable to me.

my wife used to make these for me. Thanks i haven’t been eating those in two years. She had used to make me the same with pumpkin seeds too. They were pretty good.

ya, i saw this a lot in recipes
just got a dehydrator and would like to know why its okay at 145 for the first hour

The external temperature may be 145 degrees F, but the almonds won’t reach that temperature within an hour. The enzymes within the almonds will not denature. Plus, the almonds start off wet.

i would trust that gabriel cousins knows what he’s doing…and even if they aren’t raw, they’ll still be very good for u
