I don’t wan’t to be a smartass, but it seems like you wanna make some kind of broth. But you should use some extra boiling meat with bones and marrow instead of the brisket. Otherwise the brisket will lose some of its flavor. Add one or two bay leaves and clove. You may leave the onion’s peel on, because there’s a lot of taste in it. But that’s optional.

Good work on the Brisket itself!
